#41 Vegetables
When I was on weight watchers for the umpteenth time, I vividly remember how much I hated spending time preparing meals. Everything I did took a lot of time and dirtied a lot of measuring spoons and dishes.
The meals always involved eating a lot of vegetables or else you would run out of points and be starving.
The meals as a whole were never satisfying or delicious… and the vegetables were an obligation, not something I really wanted.
Between the time, the complication, and the general apathy toward the food I was eating, it’s no wonder I didn’t like anything about losing weight that way.
Two things have changed since then… I now see vegetables as a vital part of long term health and weight loss success, and I’ve learned how to make them easily and in ways that are delicious.
In this process, I developed the skill set to prepare food in a quick way, including lots of vegetables, that I enjoy and look forward to eating that have helped my clients and I lose and maintain our weight loss.
